Church Potluck Dinner Recipes
This rice and bean casserole is filled with lots of cheddar cheese, vegetables and black beans perfect for a church potluck. This is a great side dish to share with friends and family too. You will get rave reviews anywhere it is served.
3-Rice & Bean Casserole
Prep Time : 20 minutes
Ready to serve: 50 minutes
Serves: 6-8
Ingredients:
* 1 tablespon oil,
* 1 onion, chopped
* 1 red pepper, diced
* 1 glove garlic, minced
* 1/2 tsp ground cumin
* 1/2 tsp salt
* 1/4 teaspoon pepper
* 1 can chicken broth
* 1 cup uncooked rice
* 1 can black beans
* 1 cup shredded sharp cheddar cheese
* 1 tablespoon chopped fresh cilantro
* Hot pepper sauce
Instructions:
1. Preheat broiler
2. Coat 6-cup baking dish with cooking spray
3. In pot heat oil over medium-high heat
4. Add next 6 ingredients
5. Cook stirring occasionally until tender 5-6 minutes
6. Add chicken broth
7. Over high heat bring to boil
8. Stir in rice
9. Reduce heat to medium-low
10. Cover and simmer until liquid is absorbed – 20 minutes
11. Transfer to baking dish
12. Sprinkle with remaining cheese
13. Broil until cheese is melted 2-3 minutes
14. Sprinkle with cilantro
15. Serve with hot pepper sauce

Chicken Pasta Salad
Ingredients:
* 1-pound penne pasta cooked al dente according to package directions
* 2-tablespoon extra virgin olive oil
* 1-1/4 pound chicken tenders, cut into bite size pieces
* 2 tablespoons butter
* 4 cloves garlic – chopped
* 2 tablespoons flour
* 1/2 cup white wine
* Juice of 1 lemon
* 1 cup chicken broth or stock
* 3 tablespoons capers, drained
* 1/2 cup chopped fresh flat-leaf parley
* Chopped chives for garnish
Instructions:
1. Heat a deep nonstick skillet over medium-high heat
2. Add 1 tablespoon of olive oil
3. Add the chicken to the pan
4. Season with salt and pepper
5. Brown chicken until lightly golden all over 5-6 minutes
6. Remove chicken from pan
7. Set it aside
Complete the sauce
1. Add 1-tablespoon olive to pan
2. 1 tablespoon of butter
3. Add garlic and shallots
4. Sauté for 3 minutes
5. Stir in flour and broth
6. Stir in caper and parsley
7. When sauce starts to bubble
8. Add remaining tablespoon butter
9. Put chicken back in the pan
10. Heat thorouly for 1-2 minutes
11. Toss hot pasta with chicken and sauce
12. Add salt and pepper to taste
13. Top with fresh chives
