Dazzle Them At The Office Potluck (with recipe)
Your office colleagues will love this easy to make Mexican chopped salad. The salad is made with tender hearts of palm, avocado and store bought dressing. However you can jazz it up with fresh lime juice and zest. This great Mexican chopped salad is sure to be a hit at the next Office Potluck. Mexican Chopped Salad

Makes 8 Servings
Ingredients:
*1/3 cup bottled olive oil and vinegar salad dressing
*1 scallion
*1 tablespoon lime juice
*1 teaspoon grated lime zest
*1/2 teaspoon salt
*1/4 teaspoon pepper
*6 cups thinly sliced romaine lettuce
*1 can hearts of palm, drained, cut into 1/2 thick slices
*1 avocado, peeled, pitted and chopped
*1 cup cherry tomatoes, halved
*1 can sliced black olives
The heart of palm or palmetto is a sweet, soft, yet crispy, ivory-colored vegetable. It is firm in texture and has a very delicate flavor. The Heart of Palm has a shelf life of about 2 weeks when wrapped in plastic and kept refrigerated.
You can find these delicacies in the fresh fruit section of the grocery store or you can find them canned. They can be made into appetizers when you sauté’ them in butter and top with grated Parmesan cheese. They are a low calorie snack. The Heart of Palm makes a wonderful addition to any salad.
Instructions:
1. Combine dressing, scallion, juice, zest, salt and pepper
2. In large bowl toss lettuce, hearts of palm
3. Avocado, tomatoes and olives
4. Pour dressing mixture over salad
5. Toss
6. Garnish with lime slices
Add a special touch: Spoon this colorful salad into bibb lettuce leaves and garnish with fresh sprigs of cilantro.
