Extra Hard-Boiled Easter Eggs

Everybody always has extra hard-boiled Easter eggs, right? Nobody ever wants to not have enough so we always make extra. There is something that you can do with these extra eggs, colored or not. Here are just a few ideas on things that can be done with those extra hard boiled-eggs.

Why not make deviled eggs? The word deviled in this case actually means spicy or hot. You can do this by adding some black or cayenne pepper into the yolk mixture. A bit of horseradish also works well. This will certainly give you that taste sensation. Do you like your deviled eggs with a hint of sweetness? Just add sweet gherkins or relish for this.

Regular hard boiled eggs are another idea. Actually you should not boil eggs. Why not? Because when eggs are boiled they tend to be rubbery. The alternative is to boil the water, remove the pot from the heat and place the eggs in the hot boiled water. For soft eggs leave them in the water for 1-4 minutes, hard boiled is from about 15-17 minutes. The best bet is to use older eggs. Piercing the eggs with a needle prior to cooking will make them easier to peel.

How about making egg salad? There is nothing more delicious than an egg salad sandwich on lightly toasted bread. You can make fresh egg salad nestled in a bed of lettuce leaves with just a bit of paprika or even place some chives on the top. Like deviled eggs, there are many ways to make egg salad. Gather together your favorite ingredients and whip up a bowl with your left over boiled eggs.

Have you ever heard of Scotch eggs? If you like the taste of eggs, sausage and deep fried food you'll definitely like Scotch eggs. Even though this dish is called Scotch it isn't Scottish at all. It was actually created by the London food shop Fortnum & Mason. They are well known for being a favorite shop of the British Royal Family.

All you need to do is peel the boiled or chilled egg, then roll the egg in flour. Next, wrap the egg in the ground sausage meat. Dip the meat/egg mixture in beaten eggs then roll in bread crumbs. Deep fry this until the sausage is golden brown. You can Google "scotch eggs" to find the recipe.

The last idea is to make pickled eggs. These may not be a favorite of yours but you do have extra eggs so why not give them a shot? This can be great for gathering the kids around and conducting an experiment with eggs and various pickling recipes. There is a wide range of pickling recipes. Some of the names for pickling are sweet and sour, pineapple pickled eggs, dark and spicy eggs, cidered eggs, and garlic pickled eggs and beet juice eggs.

These are just a few ideas on what to do with those extra hard boiled eggs. There is always the option to slice and add these extra eggs to salads or cooked dishes too. It will also provide you with extra protein. If you just don't care for plain old eggs, boiled or otherwise make up one or more of these dishes and share them with others.
