Food Fit for Your King on Father’s Day (5 Recipes)
What better way to start Dad out on his special than with a hearty meat filled breakfast. Sure it’s a quiche and it’s rumored that real men don’t eat quiche, but after one smell of this delicious breakfast he won’t even notice.
Sausage Quiche Just for Dad
1 pkg. sausage
1 TBSP olive oil
8 eggs, slightly beaten
1/2 C green onion, chopped
1/4 C milk
1/2 C sweet red pepper, chopped
1 C cheddar cheese, shredded
1 C mushrooms, sliced
1 tsp. salt
1 C frozen hash browns
1/4 tsp. black pepper
1/4 C Parmesan cheese
Cook the sausage until completely browned. Drain well on a piece of paper towel. Place the olive oil in a large skillet over medium heat. Add the onion, red pepper and mushrooms. Cook until fork tender about 7 minutes. Remove and drain on paper towel. Place the eggs, milk, cheddar cheese, salt and pepper into a mixing bowl. Mix ingredients together well. Add the cooked vegetables and the sausage and blend. Preheat the oven to 350 degrees. Place foil in each cup of a muffin tin. Fill each foil lined cup with the mixture. Bake 25 minutes or the eggs are set. Remove and sprinkle the tops with the Parmesan cheese before serving.
Dad’s always like things cooked on the grill. It’s quick and simple and makes his mouth water just at the thought. Here are a couple of great grill recipes to try.
Mushroom’s on the Grill
1 tsp. rosemary, chopped
2 tsp. thyme, chopped
1/4 tsp. salt
1/4 C olive oil
1/4 tsp. black pepper
2 Tbsp. lemon juice
1 clove garlic, minced
3/4 C fresh mushrooms, sliced
1 green bell pepper, cut into 1 inch pieces
2 red bell peppers cut into 1 inch strips
Place the rosemary, thyme, salt, oil, pepper, lemon juice and garlic into a mixing bowl. Blend together well. Alternating the vegetables place them on a grill skewer. Baste the vegetables with the marinade. Grill 5 minutes, turning once and basing often until the vegetables are tender.
Beer Marinated Ribs
2 TBSP season salt
6 bottles of beer
Salt to taste
3 garlic cloves, minced
2-6 jalapeno peppers, seeded and sliced
1 medium onion, sliced thin
1 C barbecue sauce
4 lbs. pork spare ribs, should be about 2 racks
Place the beer, season salt, garlic, peppers and onion in a Dutch oven over high heat. Bring to a rapid boil. Add the ribs and bring liquid back to a rapid boil. Lower heat to the lowest setting, cover and allow simmering for 60 minutes. Remove from heat and allow cooling to room temperature. Once cool refrigerate for at least 4 hours or overnight. Remove ribs and allow drying slightly. Heat the grill to medium temperature. Baste the ribs with the barbecue sauce. Place meat side down on the grill and cook 7 minutes, basting often until ribs become crispy. Turn the ribs and baste cooking another 5 minutes or until a golden crispy brown.

Dad’s Special Ice Cream Sandwich
Take 2 large chocolate chip cookies. Place a scoop of Dad’s favorite ice cream in between the 2 cookies. Wrap in plastic wrap and place in the freezer until the ice cream is frozen solid.
