6 boneless, skinless chicken
breasts
2 eggs mixed with 2 cups of milk
for dipping
2 cups of flour
1 can of pineapple chunks,
drained
6 celery stalks, washed and cut
into small chunks
2 chicken bouillon cubs in 1 cup
of water
¼ cup vinegar
3 Tbsp. soy sauce
3 Tbsp. corn starch
1 ½ cups of sugar
Cut up chicken into 1 ½ inch
chunks. Dip chicken in egg mixture and then into flour until well
coated. In a frying pan, melt 2 Tbsp. of butter. Add the chicken
pieces and cook until browned. Transfer semi-cooked chicken to an
electric fry pan and add the celery, green peppers, pineapple, and ¼ cup of the
chicken bouillon and cook on medium heat for about 30 minutes until the veggies
are tender.
In a small saucepan on the
stove, mix together the remaining ¾ cup of chicken bouillon, vinegar, soy
sauce, corn starch, and sugar. Stir constantly until everything is mixed
well (about 5-10 minutes). Pour the sauce over the chicken and simmer
about 10 minutes. Serve over white rice.
