Low Calorie Chicken Dishes
Both of these low calorie lunch ideas are made with chicken. An idea that will save you time is to purchase and cook enough chicken to fill both lunch ingredients. You can cook once and eat twice, saving you money and your valuable time.
Thai Chicken Salad
Ingredients:
2 tbsp freshly squeezed limejuice
2 tsp minced fresh ginger
1 teaspoon honey
1/8 tsp chili garlic sauce or to taste
1/8 tsp extra virgin olive oil
1/4 lb extra lean ground chicken
2 cu shredded romaine lettuce leaves
1/2 shredded carrots
1/4 cup red onion slivers
2 tbsp copped fresh mint leaves
1 tbsp chopped fresh mint leaves
1 tbsp chopped cilantro
1-2 tbsp chopped dry-roasted cashews
Instructions:
Make the Dressing:
1. Combine limejuice ginger, honey chili garlic sauce and salt
2. Whisk all ingredients together
3. Gradually add the oil.
4. Blend well
Instructions for Chicken
1. Mist small skillet with olive oil spray
2. Add chicken to pan
3. Cook slowly
4. Break up meat into chucks with a spatula
5. Cook until no longer pink
6. Remove from heat
7. Stir in 1 tablespoon of reserved dressing
8. Combine lettuce carrot, onion mint and cilantro
9. Drizzle with remaining dressing and toss
10. Top with reserved chicken and sprinkle with nuts
11. Serve. UMMMM good.
Chicken Cheese Steak Wrap
Ingredients:
*1/4 lb boneless skinless chicken breast, trimmed of visible fat
*1/4 cup onion silvers
*1-whole wheat flour - low carb tortilla 7-1/2 inch diameter
*1-wedge laughing cow original light Swiss cheese
*1- tsp low sodium ketchup
*2- tsp slicked pickled hot chili peppers
Instructions:
1. Place chicken on cutting board
2. With sharp knife cut chicken into very thin silvers
3. Mist skillet with olive oil spray
4. Place onion and chicken in pan
5. Cook, separating chicken shavings with spatula
6. Brown for about 2 minutes or when chicken is no longer pink
7. Remove pan from heat
8. Place tortillas between two damp paper towels
9. Microwave on low in 10 second intervals until warmed
10. Place tortilla on serving plate
11. Spread cheese leaving about 2” on one end
12. Top with chicken mixture, ketchup and peppers
13. Fold bare end of tortilla up over filling
14. Fold sides of tortilla over middle
