Picky Eaters Love Chicken (with recipes)
Fixing a healthy meal for kids means combining good foods with good taste. This Apple and herb chicken main course is an ideal family meal that kids will love. The Apple and herb chicken combines nutrients in a delicious way. The rice side dish has a healthy mix of nutrient rich vegetables but the flavors together will please even the pickiest eater.
Apple and Herb Chicken
Makes 4 servings
Prep time: 20 minutes
Ingredients:
*1 lb chicken tenders
*2 tablespoons butter
*1 peeled, cored and sliced Granny Smith apple
*2 large peeled and sliced shallots
*1 tablespoon diced thyme
Instructions:
1. Season the chicken tenders with salt and pepper
2. Melt 2 tbsp butter in a large skillet
3. Add chicken
4. Add the apple and shallots
5. Cook and stir for about 10 minutes until chicken is cooked through
6. Check the apple for tenderness
7. Sprinkle with 1 tsp dried thyme

Pecan Rice
Ingredients:
*1 bag frozen mixed vegetables
*1 tablespoon butter
*2 cups chicken or vegetable stock
*1/4 cup chopped and toasted pecans
*1 cup Uncle Bens Fast whole grain instant rice
Instructions:
1. Sauté mixed vegetables in butter until softened
2. Stir in 2 cups broth
3. Add 1 cup rice
4. Bring to a boil
5. Simmer uncovered for 10 minutes
6. Remove from heat when liquid is absorbed
7. Stir in 1/4 cup chopped toasted pecans
