Potluck Pleasers (with recipes)
Your office colleagues will love these tortilla rollups. Jazz them up with a side of fresh lime juice and zest. These great tortilla rollups are sure to be a hit at the next potluck with adults as well as children. Potluck theme ideas that involve the spicy taste south of the border are almost always the favorite dish. You can make the filling ahead and allow the crew to make their own individual rollup.
Mexican Tortilla Roll-Ups
Serves 24
Ingredients:
*24 large 10-inch flour tortillas
*2 lbs jalapeno cold pack cheese
*3 pounds chicken pieces, cooked and shredded (you can use rotisserie chicken from the deli
*3 cups mild salsa
*1-1/4 pounds red bell pepper, seeded and diced
*1-1/2 cup scallions, or green onions, sliced
*Guacamole for garnish
*Sour cream
*Pickled jalapeno peppers
Instructions:
1. Spread each tortilla with 2-3 tablespoons cold pack cheese
2. In bowl, toss chicken with salsa, red pepper and scallions
3. Spoon approximately 1/2 mixture into each tortilla
4. Roll up tightly.
5. Serve with bean dip, salsa and jalapenos.
6. Garnish with guacamole and sour cream if desired.
Low Fat Bean Dip
Makes 5 cups
Ingredients:
*1 (15 ounce) can black beans
*1 tablespoon prepared hot sauce
*2 teaspoons lime juice
*1-tablespoon sugar
*3 tablespoons chili sauce
*1/4 cup green onions, thinly sliced
*1 (16 ounce) carton fat free sour cream
*1-1/2 cup chunky salsa, drained
*Fresh cilantro (Optional)
Instructions:
1. Drain liquid from beans and discard
2. Place beans in a food processor
3. Process until almost smooth
4. Add hot sauce, lime juice, sugar and chili sauce
5. Mix well
6. Spread the bean mixture over the bottom of a large platter
7. Sprinkle the onions evenly over the top
8. Cover beans and onions with sour cream
9. Top with salsa
10. Garnish with cilantro
11. Serve with tortilla chips
