If you want an idea for cheap party foods that will wow your guest, try this spicy black bean dip and spicier stuffed mushroom caps made with your own homemade salsa recipe. Not only are these ideas inexpensive but also taste great.
This spicy black bean dip takes just minutes to prepare. Everyone loves warm tempting appetizers.
Spicy Black Bean Dip
Ingredients:
*1 16 oz can black bean refried beans
*1 cup shredded Mexican blend cheese
*1-cup medium salsa
*1/2 cup beer
*1 tablespoon Mexican seasoning
Instructions:
1. Stir together 16 oz of Black bean refried beans
2. 1 cup shredded Mexican blend cheese
3. 1 cup home made salsa
4. 1/2 cup beer
5. 1 tablespoon Mexican seasoning mix
6. Place in a microwave-safe bowl.
7. Cover and microwave on HIGH for 3 minutes
8. Stir once or twice
9. Serve hot with home made tortilla chip for dipping
Yields: 3 cups
Stuffed Mushrooms
You can prepare the salsa stuffed mushrooms in minutes, while your guest are coming through the door. These mushroom caps are a healthy alternative to high calorie chips.
Ingredients:
*12 large white mushrooms
*1/3-cup medium salsa
*1/2 cup shredded Jack cheese
*1/4 cup flavored tortilla chips
*1-tablespoon cilantro
Instructions:
1. Remove stems from mushrooms
2. Place round side down on baking sheet
3. Fill with 1/2 cup salsa and 1/2 cup shredded jack cheese
4. Sprinkle with 1/4 cup crushed tortilla chips
5. Bake at 400 degrees for 15 minutes
6. Top with 1 tablespoon cilantro
There is plenty of fiber and veggies in this mix of cheap party foods. You can add a healthy side appetizer of chunky avocado & tomato salad as well.
