A Quick Meal Deal
Trying to create a quick meal that is also a healthy meal might be as easy as combining vegetables and pasta together. This delicious comfort food with plump juicy shrimp and satisfying pasta taste great and are good for you. These meals are surprisingly low in fat.
Angel Hair Pasta with Shrimp and Peppers
Ingredients:
*1/2 tsp extra virgin olive oil
*1/2 cup chopped onion
*1 lb large peeled and divined shrimp, tails removed
*1/2 cup chopped green bell pepper
*2 cloves garlic, minced
*1 tsp oregano leaves
*1/4 tsp salt
*2 medium tomatoes on the vine, cored and chopped
*1 tbsp fresh lemon juice
*Freshly ground pepper to taste
*4 oz angel hair pasta, cooked according to package directions
You can substitute 1 cup of sliced mushrooms for the onion.
Instructions:
1. Heat oil in a medium skillet
2. Add onion and cook for 10 minutes
3. Add shrimp, bell pepper, garlic, oregano and salt
4. Cook for 5 minutes more
5. Stir in tomatoes and lemon juice
6. Cook until heated through.
7. Season to taste with freshly ground pepper
8. Serve immediately over hot cooked pasta
Complete this meal by adding a side salad with lots of healthy vegetables and this simple fruit dessert.
Triple Fruit Crisp
*2 cans pitted red tart cherries, drained
*1 can red raspberries, drained
*1 can wild blueberries, drained
*3/4 cup 100% fruit raspberry or blueberry preserves
*2 tbsp cornstarch
*1 tsp almond extract
*2-1/2 cups low fat granola with raisins
*Fat free whipped topping
Instructions:
1. Preheat oven to 400 degrees
2. Stir together all ingredients except granola in an 8-9 inch baking dish
3. Sprinkle granola evenly over the top
4. Poking raisins under the service to keep from burning
5. Bake for 20 minutes or until bubbly
6. Serve warm with fat free whipped topping
