Remember Your Lunchbox Honey (with recipe)
Breakfast can get you through the morning. But everyone needs a hearty lunch to get them through the rest of the day. It is also a good idea to send the kids to school with a good healthy lunch. Eating a good lunch will help you and your children concentrate on important work in the afternoon.
Mix up your lunchtime meals with salads, fruits and some warm main dishes for the adults. Most offices have microwave ovens. Leftovers from the previous night’s dinner will save you both money and time.
Packed lunches are less expensive and usually more nutritious than a quick burger and fries. When you pack your lunch, you can control the fat and calorie content of that meal. When you eat out, you do not know exactly how much fat or calories are included in your meal.
A good lunch includes four parts from the USDA pyramid.
*A grain or bread
*Fruit and Vegetable
*Calcium source such as milk or yogurt
Dessert is an important addition to lunch. In fact if you pack a dessert, you actually look forward to eating your lunch.
Pita bread makes for an interesting change for lunch. Stuff a pita with tuna, chicken or an assortment of vegetables.
Use your waffle iron to create panini-like sandwiches.
Grilled Waffle Sandwiches
Ingredients:
*1/2 inch thick slices European style whole grain bread cut on the diagonal
*1 teaspoon soft butter
*1 slice cheddar cheese
*2 or more thin slices of ham, turkey or bacon
Instructions:
1. Plug in waffle iron
2. Spread butter on one side of each bread slice
3. Put cheese and meat slice between bread slices butter side out
4. When light on waffle iron lights up, put sandwich inside
5. Press down gently
6. Cook until light goes back on or until bread is crispy and cheese is melted
Yield 1 waffle sandwich
