3 Cheese Nut Ball |
Ingredients

* 2 (8 oz) pkg cream cheese, softened
* 1 (8 oz) pkg shredded sharp cheddar cheese
* 1/2 C grated Parmesan Cheese
* 1/2 C mayonnaise
* 1/4 C finely chopped green onions
* 1/4 tsp ground black pepper
* 1 C finely chopped pecans

Directions

1. Place cream cheese in a large mixing bowl and cream with an electric mixer on medium speed.
2. Add cheddar cheese, Parmesan cheese and mayonnaise and beat with mixer until smooth.
3. With a rubber spatula fold in onions being sure to mix well.
4. Add pepper and stir to mix well.
5. Cover bowl with plastic wrap and store in refrigerator over night.
6. Remove and form a round cheese ball (or two balls) using your hands.
7. Roll ball in pecans to cover. If necessary, rub just a little butter on your hands to prevent the cheese from sticking to your hands.
8. Serve with assorted crackers.

This is a nice treat to bring for a potluck or Holiday get together. I like to make two smaller cheese balls out of this recipe so I can roll one in pecans and one in finely chopped roasted almonds, or chopped peanuts. Also if you have two cheese ball plates you can put them in opposite corners of the table so your guests don't have to crowd around one plate. Enjoy!
