5 Ingredient Chicken Quesadillas |
Ingredients

*2 C chicken, cooked and chopped
*4 (10 in) flour tortillas
*2 C of fresh spinach, washed, squeezed dried and chopped
*1 (6 oz.) jar mushrooms, drained and sliced (or fresh, sauted)
*2 C Monterrey Jack cheese, shredded

Directions

1.Spread the chicken on to one half of each tortilla.
2.Add the spinach, mushrooms and cheese then fold the tortilla over the filling.
3.Place quesadilla into a lightly greased skillet over medium heat and cook 10 minutes, turning once. Watch closely so the tortilla browns, but doesn't burn.
