5 Ingredient Chunky Tomato Soup

Ingredients

*2 tsp butter
*3/4 cup shallots, chopped
*1 (28 oz.) can diced tomatoes
*2 Tbsp tomato paste
*1 (14 oz.) can chicken or vegetable broth

*optional - top with a sprinkle of fresh dill to serve

Directions

1. Melt the butter in a saucepan, stir in the shallots and cook 5 minutes.
2. Add the tomatoes with their juice, the tomato paste and broth and bring to a boil.
3. Once boiling, reduce the heat to low and simmer 10 to 15 minutes.
4. Optional - Top with the fresh dill just before serving.

Story

Tomato soup is one of my favorite soups when I don't feel good. I know chicken soup is supposed to cure a cold, but tomato soup is just so much more soothing to me. This is a super easy recipe that I can make even when I'm feeling under the weather. Better yet, it's so easy even the Hubby and kids could make it. Enjoy!
