Almond and Fruit Yogurt


* 2 almond biscotti
* 1 C vanilla yogurt
* 1/2 C frozen fruit of your choosing, thawed
* 4 tsp orange blossom honey
* 4 TBSP sliced almonds, toasted


1. Place yogurt and fruit in a blender.
2. Puree until smooth and liquid thickens.
3. Break up biscotti.
4. Place broken up biscotti in serving bowl.
5. Pour fruit and yogurt mixture over the top of biscotti.
6. Top with honey and almonds.


My husband likes to make breakfast so I usually eat a bacon and eggs kind of breakfast when he cooks. But when I'm left alone to fend for myself, I like to try something fruity with creamy yogurt and crunchy almonds thrown in for good measure. This is one of my favorite "go to" recipes when I'm on my own. Oh yeah, the kids like it, too!
