Kid Style Broccoli with Rice and Cheese |

Ingredients
|
*1 C chopped carrots
*1 C chopped celery
*3/4 C chopped onions
*3 TBSP canola oil
*2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
*1/2 tsp pepper
*4-1/2 C broccoli florets
*1/2 C instant white rice, uncooked
*2 C milk
*1/4 C grated Parmesan cheese (use as much as it takes to make this tasty for your kids)

Directions

1. Place oil in a Dutch oven.
2. Over medium high, heat oil until hot.
3. Put onions, carrots and celery in hot oil.
4. When vegetables are slightly tender, about 5 minutes, add chicken broth.
5. Sprinkle with pepper.
6. Bring to a rapid boil.
7. Reduce heat to low.
8. Add broccoli and rice to the Dutch oven.
9. Cover and simmer for approximately 15 minutes.
10. Add milk and cheese.
11. Cook on low heat until completely heated and cheese has completely melted.

Using just the florets of the broccoli helps with the kid-friendliness, but the added cheese completes the task in grand style. Don't be afraid to add as much cheese as it takes to make this dish one of your kids' favorite.
