Apple & Citrus Sweet Potato Casserole |
Ingredients

* 2 large sweet potatoes
* 2 Golden Delicious apples, cored and sliced into rings
* 1/2 C orange juice
* 1/4 C firmly packed brown sugar
* 1 tsp cornstarch
* 1/8 tsp ground cloves
* 2 tbsp pecans pieces

Directions

1. Place the sweet potatoes into a microwave dish.
2. Microwave on high 8 minutes or until the potatoes are starting to become soft.
3. Cool the potatoes until able to handle then peel and cut into chunks.
4. Coat a casserole dish with a cooking spray.
5. Layer 1/3 of the sweet potato chunks in the bottom of the casserole dish.
6. Layer 1/3 of the apple rings over the sweet potatoes.
7. Continue layering alternating between sweet potatoes and apples until all used.
8. Pour the orange juice into a pan and place on low heat.
9. Add in the brown sugar, cornstarch, and ground cloves.
10. Over low hear stir constantly 5 minutes or until sauce begins to thicken.
11. Pour the sauce over the sweet potatoes and apples.
12. Sprinkle the pecans evenly over the top of the casserole.
13. Bake in a 350 degree for 18 minutes or until the apples are fork tender.

A few years ago, we all got bored with our traditional sweet potato and marshmallow bake for our holiday dinner. Maybe it was because the kids started developing more grown up taste buds, or maybe it was just time for a change. Whatever the reason, mixing sweet potatoes, apples, and citrus together is a great way to expand on this classic dish.
