Apple Dijon Chicken Skillet |
Ingredients

* 2 TBSP of butter, divided
* 4 boneless, skinless chicken breasts, butterfly cut
* 1/2 tsp salt
* 1/2 tsp pepper
* 1 tart apple, cut into wedges
* 1/3 C of whipping cream
* 2 TBSP of Dijon mustard

Directions

1. Melt 1 TBSP of butter in a skillet; add the chicken, salt and pepper.
2. Cook 7 minutes turning once until brown then remove and keep warm.
3. Add the remaining butter and apple to the skillet and cook 3 minutes.
4. Stir in the cream and mustard and cook 3 minutes or until bubbly.
5. Serve the sauce over the chicken.

Whenever you see apple and Dijon in the same recipe you know you're in for a treat.
This dish goes especially well with wild rice. Of course, you can make a mix of brown and wild rice; you just need to have the nutty flavor of both rices to compliment the sweet apple and Dijon flavors. Very tasty and actually a very good "company's coming" dish.
