Apple Pie Spice Rice Pudding |
Ingredients

* 1 (4 serving) pkg. sugar-free vanilla cook-and-serve pudding
* 2/3 C nonfat dry milk powder
* 1 (8 oz.) can unsweetened, crushed pineapple, undrained
* 1 C water
* 1/4 C raisins
* 1 tsp. vanilla extract
* 1/2 tsp. apple pie spice
* 2 C cold, cooked rice (about 1 1/3 C uncooked rice)

Directions

1. Place the dry pudding mix and the milk powder into a large saucepan and whisk together.
2. Mix in the undrained pineapple, raisins and water.
3. Place pan over medium heat.
4. Stirring continuously cook mixture until it begins to boil.
5. Mixture will be slightly thick.
6. Remove the pan from the stove.
7. Stir in the vanilla extract.
8. Add the apple pie spice and stir well.
9. Fold in the rice.
10. Serve immediately.
