Applesauce Cranberry Muffins |

Ingredients
|
* 2 cups all-purpose flour
* 1/2 cup sugar
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1 egg (lightly beaten)
* 1/3 cup vegetable oil
* 1 cup unsweetened applesauce
* 1 cup fresh or frozen cranberries, chopped into smaller pieces
* 1/2 cup pecans chopped

Directions

1. Preheat oven to 350F.
2. Grease the muffin tin lightly.
3. In a large bowl mix the flour, sugar, baking soda, cinnamon and salt.
4. In another bowl mix the egg, oil and applesauce.
5. Add the applesauce mixture to the dry ingredients and mix together gently (do not over mix).
6. Gently fold in the frozen cranberries.
7. Add mixture into muffin cups until 2/3 full.
8. Bake at 350F for approximately 30 minutes.
9. Cool for 5 minutes before removing from pan.

Applesauce and cranberries are an excellent pairing, both being so tart combined with the sweetness of the applesauce. I really like the added crunch from the pecans, too!
