Apricot Raisin Quinoa


* 1/2 cup uncooked quinoa
* 1 1/2 cups rice milk
* 1 cup chopped apricots
* 1/4 tsp vanilla extract
* 2 Tbsp golden raisins


1. In a medium saucepan, combine quinoa and rice milk and bring just so it starts to bubble, immediately turning heat down to low, cover, and simmer slowly for 15 minutes until quinoa is tender.
2. Stir in apricots, vanilla, and raisins.
3. Serve immediately or chill if desired. Yields six 1/2 cup snack servings.


What a tasty way to get your protein and all sorts of super-nutrition in one little snack! Quinoa is one of those foods known as a nutrient 'powerhouse.'

Rice milk is a nice alternative to cow's milk because it is fat free, but you can substitute any milk product you like. Be absolutely sure that you don't let the milk come to a 'hard boil' or it will scorch. Rice milk is a bit easier to keep from scorching, but if you don't let the milk boil, you can use any milk you like.
