Apricot Smothered Chicken |
Ingredients

* 4 (5 oz. each) boneless and skinless chicken breasts
* 1 T lemon juice
* 1/3 C apricot preserves
* 1/8 t ground allspice

Directions

1. Rinse chicken if necessary and pat dry with paper towel.
2. Heat broiler
3. Spray broiler rack with a non stick cooking spray.
4. Lay chicken on rack.
5. Brush chicken side facing up with lemon juice.
6. Place under broiler for about 5 minutes.
7. Turn the chicken over and brush with lemon juice.
8. Continue to broil 8 minutes or until when pricked with knife the juice runs clear and chicken is no longer pink.
9. Place the preserves in a small saucepan over low heat.
10. Add the allspice.
11. Heat until smooth being sure to stir continuously so the preserves don't stick or burn.
12. Brush chicken with the preserves just before serving.

When I've only got time to throw some chicken under the broiler and get it on the table, this is a quick and flavorful way to make a simple chicken meal special. The apricot preserves add a graceful and refined finish to an otherwise boring meal. Serve it alongside a spring green salad with a vinegarette dressing and your family will think you have been studying under a five-star chef!
