Arroz con Pollo - Crock Pot

Ingredients

* 3 lbs boneless chicken thighs (with or without the skin is fine)
* 1 can (15 oz each) Italian stewed tomatoes
* 2 cups long grain rice
* 1 envelope yellow rice seasoning mix
* 2 cans (14 oz each) low sodium chicken broth
* 1 teaspoon minced garlic
* 1 teaspoon dried oregano
* 3/4 cup water
* 16 oz package frozen peas, thawed & drained

Directions

1. Coat crock pot with non-stick spray.
2. Mix all ingredients except peas in a bowl then place in crock pot.
3. Cook, covered, on low for 7 hours.
4. In last 15 minutes, stir in peas.

Story

If you've noticed lately, boneless chicken thighs are becoming more readily available in the meat counter. Why? Well, they're less expensive than chicken breasts, and if you like dark meat, why not eat them instead? This is a great dish in which to use the boneless thighs because the flavor stands up so well with the garlic and oregano. Very tasty and very kid-friendly!
