Arugula Mushroom Quinoa |
Ingredients

* 1 Tbsp olive oil
* 1/2 chopped onion
* 1 cup uncooked quinoa
* 1 garlic clove, minced
* 2 cups vegetable or chicken broth
* 2 cups arugula, cleaned and chopped
* 1 cup fresh mushrooms, finely sliced
* 1 carrot, peeled and finely shredded
* 1/4 cup shredded Parmesan cheese
* salt and black pepper to taste

Directions

1. Heat olive oil in a large saucepan over medium heat.
2. Add onions and saute about 3 or 4 minutes or until translucent.
3. Add quinoa and garlic, cooking 1 more minute, stirring.
4. Add broth and bring to a boil, immediately reducing heat to low and simmer about 12 minutes until quinoa is tender.
5. Stir in arugula, mushrooms, and carrot, then simmer 2 minutes.
6. Stir in cheese and season with salt and pepper to taste, then serve immediately. Serves 4 to 6.
