Cauliflower, Spinach and Bacon Salad |

Ingredients
|
* 3/4 lb bacon, cooked and crumbled
* 1 cup mayonnaise
* 1/4 cup grated Parmesan cheese
* 2 tablespoons sugar (optional)
* 1 tablespoon finely chopped onion
* 1 tablespoon minced fresh parsley
* 1 small head cauliflower, cut into bite size florets, rinsed and drained very well
* 1 package (10 oz) fresh spinach, rinsed and drained very well
* 1 cup sliced fresh mushrooms

Directions

1. Stir together the mayonnaise, Parmesan cheese, sugar, onion and parsley.
2. In a separate large bowl, mix together the cauliflower, spinach, mushrooms and bacon.
3. Toss in dressing from step one to coat vegetables.
