Bacon Wrapped Grilled Meat & Jalapeno Poppers |
Ingredients

* 1/2 C canola oil
* 1/3 C pineapple juice
* 2 tsp soy sauce
* 1 tsp red pepper flakes
* 3 garlic cloves, minced
* 1 lb chicken breasts, boneless, skinless and cubed
* 1 lb beef,cubed
* 4 jalapeno peppers, cleaned and cut into 4 strips each
* 8 strips of bacon - cut in half
* 16 toothpicks

Directions

1. In a large mixing bowl whisk together canola oil, pineapple juice, soy sauce, red pepper flakes, and minced garlic.
2. Pour the marinade into a zip lock bag.
3. Place the chicken and beef in the bag with the marinade, close tightly and turn to coat.
4. Put bag in refrigerate for 1 hour or as long as overnight.
5. Light the grill and heat to medium high temperature. Use a grilling basket if you have one.
6. To assemble, place one pepper strip on top of each half bacon slice.
7. Divide up the chicken and beef so you have 16 equal portions.
8. Put portion of chicken/beef on top of pepper strip/bacon combo.
9. Wrap the bacon around the chicken/beef and pepper strip and secure with a wet toothpick.
10. Grill for 20 minutes, turning every 5 minutes to cook evenly on all sides.

You may not consider this a full meal, but there are times when this appetizer is enough to satisfy. This makes 16 meaty appetizers and if you serve these with a big salad, you could fill up pretty quickly. The marinade is quite delicious and really gives the chicken and beef enough flavor to compete with the bacon and jalapenos. Very nice blend of powerfully yummy foods!
