Baked Barbeque Chicken Family Style


*1 C honey style barbeque sauce
*4 chicken thighs
*1 green pepper, cut into strips
*2 carrots, sliced
*2 potatoes, sliced
*1/2 tsp salt
*1/4 tsp pepper


1. Heat the oven to 350 degrees while preparing the chicken.
2. Pour enough barbeque sauce in the bottom of a baking dish to just cover.
3. Place the chicken thighs into the pan in a single layer.
4. Lay the vegetables around the chicken thighs.
5. Sprinkle the salt and pepper over everything.
6. Pour the remaining barbeque sauce over the top.
7. Bake 40 minutes or until the chicken juice runs clear.


Don't you sometimes get hungry for barbequed chicken, especially when you put the grill away for the winter! I like this simple family style meal because it's healthy and filling. It's great to have all the veggies and meat in one pan because the flavor is so incredible, and there's that whole business of washing fewer pots and pans!
