Baked Carmel Apple Squares |
Ingredients

* 1 C plus 1/4 C all-purpose flour
* 1/4 C plus 1/2 C firmly packed brown sugar
* 1/2 C butter or margarine
* 2 large eggs
* 1 tsp vanilla extract
* 2 Granny Smith or Golden Delicious apples, cored, peeled and chopped
* 1 Cup of caramel candies, each cut in quarters

Directions

1. In a large mixing bowl put 1 C of flour and 1/4 C of brown sugar.
2. Cut the butter in using a pastry blender until mixture becomes crumbly.
3. Spray an 8 inch baking pan generously with a non-stick cooking spray.
4. In the bottom of the prepared pan press the crumb mixture.
5. Bake 8 minutes or until lightly brown in a 350 degree oven.
6. Take the pan from oven and set aside, leaving the oven on.
7. In a mixing bowl beat the eggs slightly with a fork.
8. Add the remaining flour and brown sugar along with the vanilla to the eggs.
9. Carefully fold in the apples and caramels.
10. Spread the mixture over the top of the baked crust.
11. Bake 28 minutes or until the top is a light golden brown.
12. Cool completely before cutting.

Use any good crisp and tart apple for this recipe. Don't skimp on the caramels... measure your cup of caramels AFTER you cut them into quarters so you get a good cupful.
