Baked Potatoes Avocado


* 4 large baking potatoes
* 1 avocado
* 4 tablespoons sour cream
* salt and pepper to taste
* 4 slices of bacon, diced and cooked until crisp, then drain on paper towels


1. Preheat oven to 375.
2. Scrub potatoes and pierce with a fork each a few times.
3. Bake for 1 1/2 hours in 375 degree oven.
4. Mash avocado until still slightly chunky then mix with sour cream.
5. Slice the potatoes down the middle, flake the insides until mealy, then top with avocado mixture and bacon.


If you normally don't think to add avocado to your potato toppings favorites list, you will after you try this. If you like a little spice with your avocado, sprinkle a few red pepper flakes into the sour cream, or add a drop of Louisiana Hot Sauce. That should do it!
