Barley Vegetable Soup

Ingredients

* 2 tablespoons olive oil
* 3 cloves garlic (crushed)
* 1 onion (finely chopped)
* 2 cups carrots (roughly chopped)
* 2 stalks celery (finely chopped)
* 2 zucchini (diced)
* 3/4 cup uncooked barley
* 1 bay leaf
* Dash sugar
* Salt and pepper to taste
* 1 can diced tomatoes

Directions

Place olive oil in large pot and add onions and garlic. Sautee on low until brown (about 2 minutes).

Add barley, carrots, zucchini, celery, bay leaf, and enough water to cover. Bring to a boil and simmer until barley is tender.

Add sugar, salt, pepper, and tomatoes. Simmer for 15 minutes and serve.
