Basic Muffins |
Ingredients

* 2 C all purpose flour
* 1/3 C sugar
* 1 TBSP baking powder
* 3/4 tsp. salt
* 2 egg whites
* 1/4 C canola oil
* 1 C skim milk

Directions

1. Sift together in a large mixing bowl the flour, sugar, baking powder and the salt.
2. In a different bowl whisk the egg whites slightly.
3. Carefully pour the oil into the egg whites.
4. Add the milk and whisk until well blended.
5. Pour the egg mixture into the bowl with the dry ingredients.
6. Mix with a rubber spatula until everything is just moist.
7. Set the oven temperature to 400 degrees and allow to heat while preparing the muffins.
8. Spray a muffin tin with a non stick cooking spray or use paper muffin cups in each tin cu.
9. Fill each cup 3/4 full of batter.
10. When the oven is heated to 400 degrees bake the muffins for 22 minutes or until a toothpick inserted in the center of the muffin comes out clean.
11. Remove from the oven and allow to cool slightly before serving.

Everybody needs at least one basic muffin recipe. Some kids are picky eaters and can't tolerate too many flavors. When you're making treats for school or a potluck, a basic, simple muffin recipe might be the best plan. Of course, you've got your base now in case you want to add some frosting or other topping.
