Basil and Garlic Shrimp Linguine


*1/2 (16 oz) box linguine noodles
*1 C shrimp, peeled and deveined
*1 (14.5 oz) can diced tomatoes with basil and garlic, drained well
*1 (3 oz) pkg. cream cheese, room temperature


1. Cook the pasta as directed for half a box on the package. Drain the pasta well and keep warm.
2. Place a large, heavy skillet over medium heat and add the shrimp.
3. Stir in the tomatoes with the basil and garlic.
4. Add the cream cheese and stir until the mixture become melted and creamy.
5. Cook 4 minutes, stirring continuously until heated through and shrimp is pink.
6. Fold the shrimp mixture into the pasta.


Sometimes, a simple little lunch is in order, but that simple lunch has to be good. Do you have family in from out of town and you need to put together something good, but quick and easy, so you can enjoy lunch but get back out there sight-seeing? This lunch goes together very fast and tastes like you spent all day simmering it. The short-cut of using already flavored diced tomatoes is certainly one thing that helps!
