BBQ Bean Chili - Crock Pot |
Ingredients

* 1 1/2 lbs ground beef, browned & drained of fat
* 1/2 cup chopped celery
* 1/2 cup chopped mushrooms
* 3/4 cup chopped onions
* 1 bay leaf
* 2 tablespoons chili powder
* 1 teaspoon garlic powder (you may substitute 1 clove minced or grated garlic if you like)
* 1 teaspoon salt
* 1 teaspoon paprika
* 1/2 cup of your favorite bbq sauce (use up those leftover bottles piling up in your fridge)
* 1 can (16 oz) tomato sauce
* 1 can (28 oz) stewed tomatoes, not drained (you may substitute any large can of diced tomatoes if you don't have stewed)
* 1 can (15 1/2 oz) kidney beans, rinsed & drained
* 1 teaspoon red cayenne pepper (taste please!)

Directions

1. Combine all ingredients, except kidney beans, in crock pot. Stir well.
2. Cover and cook on low for 8-10 hours.
3. About 2 hours before serving gently stir in kidney beans.
4. Find, remove and throw out the bay leaf before serving.

This is my use-it-up chili. I love being able to throw whatever I have in a crock pot, including leftover bottles of barbecue sauce, and just letting it simmer the day away. The barbecue sauce adds a definate 'zing' to this chili which makes it especially suitable for game-day with sides of pickles, chips, and plenty of beer or other super cold beverage of choice. Enjoy!
