* 1 1/2 lbs beef stew meat, cubed
* 1 tablespoon vegetable oil
* 1 cup sliced carrots
* 1 cup sliced celery
* 1 medium onion, chopped
* 1/2 cup chopped green bell pepper
* 1/4 cup chopped fresh parsley
* 4 cups beef broth
* 16 oz can diced tomatoes
* 1 cup spaghetti sauce
* 2/3 cup pearl barley
* 1 1/2 teaspoons dried basil
* 1 teaspoon salt
* 1/4 teaspoon pepper

My husband would not eat anything cooked with barley until I tried this soup. I think the soup is so flavorful that the barley isn't dominant. Not only is it a hearty soup, but inexpensive to make, as well. Crock pots are great for less expensive cuts of meat, so you can use beef stew meat, or even cut up your own budget cuts, and the results are always nice and tender.
