Beef and Sauerkraut Soup - Crock Pot
Ingredients
* 2 lbs sauerkraut
* 1 can (28 oz) diced tomatoes (not drained)
* 5 cups water
* 1 can (6 oz) tomato paste
* 2 bay leaves
* 1/4 teaspoon ground pepper
* 1/4 teaspoon seasoned salt
* 1 1/2 lbs beef top round steak, cut into 1/2" cubes
* 2 tablespoons sugar
* 3 tablespoons fresh lemon juice
Directions
1. Put in crock pot: sauerkraut, tomatoes, water, tomato paste, bay leaves, pepper, seasoned salt and beef.
2. Cover and cook on high for 3 hours. Bring heat down to low and cook for another 4 hours.
3. Take out bay leaves and throw away. Add sugar and lemon juice. Stir and serve.
Story
Take advantage of sales on round steak when you can, and give this tangy meal a try. I was in a rut about what to make with round steak; stuck with the Swiss Steak melody playing in my head. I love the combination of the sauerkraut tartness with the sweetness of the diced tomatoes. It's an unusual combination of flavors that really works!
