Beef Chili Cafeteria Casserole


* 1 lb ground beef
* 1 large onion, chopped
* 1 green bell pepper, chopped
* 1 (16 oz) can diced tomatoes
* 2 teaspoons chili powder
* 1/2 cup white rice, not cooked
* 1 teaspoon salt
* 1/4 teaspoon pepper


1. Brown ground beef with onions and green pepper. Drain fat.
2. Add remaining ingredients and mix well. Put in a casserole dish and cover. Bake at 350 for about an hour.


This is a dish that brings back good memories for me of my elementary school cafeteria. We were a small school, so the meals were basically "homecooked" right there in the school. We were usually served dishes very similar to this recipe - a hearty mix of meat, vegetables, and rice, potatoes, or pasta, all mixed together somehow in a fabulous casserole. The chili spice in this dish really wakes it up and it has quickly become my own family's favorite cafeteria dish!
