1. Put ribs in a large saucepan. Then add water, potatoes, onions, carrots, celery and salt. Bring to a boil. Bring heat down to simmer, cover and cook for 2 hours.
2. Take out meat and bones. Cut meat up and put back in saucepan. Throw bones away.
3. Add corn and green beans. Cover and simmer for another 1/2 hour.

Beef short ribs are a very economical way to make a hearty soup. The flavor is very rich, because you're cooking the bone along with the meat. Stick with the traditional vegetables, and you'll end up with a soup that you'll be proud to serve the family... even Mom and Dad. Have a little crusty bread handy so Dad can dip!
