Beefy Spanish Rice Skillet |
Ingredients

* 1 1/2 lbs ground beef
* 1 medium onion, chopped
* 1 (28 oz) can crushed tomatoes
* 2 cups water
* 1 1/2 teaspoons salt
* 1/4 teaspoon pepper
* 1 teaspoon chili powder
* 1/2 teaspoon Worcestershire sauce
* 2 cups long grain rice

Directions

1. Brown beef in a large heavy skillet. Drain the fat if necessary.
2. Stir in the remaining ingredients.
3. Bring mixture to a boil, then immediately turn heat down to simmer.
4. Simmer, covered, for 35 to 40 minutes, or until the rice is cooked thoroughly.
5. Stir frequently during the simmering time.

As far as skillet meals go, this is definitely one of the easiest and most filling.
This is a kid-friendly dish that adults like as well. I like to use long grain brown rice to add more texture to the finished dish. You can really use any rice as long as it isn't the "minute" variety.
As you stir the dish while it simmers, be sure to replace the cover each time in order for the rice to cook thoroughly. If necessary, you can always add a drizzle or two of water if the mixture starts to dry out before the rice is cooked.
