Bite Size Apricot Cheddar Snacks |
Ingredients

* 1/4 C shredded cheddar cheese, room temperature
* 1/2 C cream cheese
* 1 1/2 C dried apricots, diced
* 1/2 C fresh parsley, chopped fine

Directions
|
1. In a large mixing bowl put the cheddar cheese and cream cheese.
2. With an electric mixer on low speed beat 2 minutes.
3. Using a rubber spatula fold in the dried apricot pieces.
4. Roll the cheese mixture into balls the size of small walnuts.
5. Roll the balls of cheese through the parsley to coat.
6. Place the cheese balls on wax paper and chill until firm.

The dried apricot in these cheddar cheese snacks adds a real nice unexpected sweet taste. They are handy just to pick up and pop right in your mouth, or they are a perfect size to place on top of a cracker to eat. These appetizers are perfect, too, for potluck events or holiday appetizers because you don't end up with a sloppy looking cheese ball like you do when you make the large size.
