Black Beans & Green Chilies Salad

Ingredients

* 15 oz can black beans, drained
* 1 medium tomato, chopped
* 1/2 cup chopped red bell pepper
* 1/4 cup chopped red onion
* 4 oz can chopped green chilies, drained

* 2 tablespoons vinegar
* 1 tablespoon olive oil
* 1/4 teaspoon salt

Directions

1. Put first 5 ingredients in a serving bowl.
2. In a separate bowl, whisk together last ingredients until nice and emulsified.
3. Pour liquid into serving bowl over vegetables and toss together until nicely coated.
4. Cover and refrigerate at least 1 hour before serving.

Story

Black beans are loaded with protein, so if you are looking for a main dish for your vegetarians at the table, this makes a nice meal. Serve it with lots of crusty bread and no one will go hungry! The intense flavors work wonderfully together with the black beans to make a very special main dish or side salad.
