Black Beans and Veggie Blend


* 1 can (15 oz) black beans, rinsed and drained
* 1 cup of your favorite salsa
* 1 bag (16 oz) frozen vegetable blend (broccoli, red bell pepper, onion)


1. Combine all ingredients in a large saucepan. Cook, covered, over low heat for about 10 - 15 minutes. Do not allow to boil. Stir occasionally.


Black beans have become a staple in our house. We're on a tight budget, black beans are an economical source of protein and iron, and they're so delicious! Our youngest is hooked on them, so we need to find new ways to serve black beans almost every week. Combining frozen vegetable blends and salsa with the black beans is an easy and tasty way to serve this versatile favorite of all beans.
