Bleu Cheese Stuffed Beef Burgers |
Ingredients

* 1 lb ground beef
* 1/2 large shallot
* 1/2 cup bleu cheese, crumbled
* 1 Tbsp fresh ground black pepper
* salt to taste

Directions

1. Get grill set to medium-high heat.
2. In a small bowl, mash together the shallot with the bleu cheese.
3. Separate the ground beef into 4 equal parts and form each part into large thin, flat patties.
4. Take half the bleu cheese mixture and spread on one pattie (keeping it about a quarter inch away from the edge), and take the remaining half and spread on another pattie.
5. Put the remaining patties on top of the patties with the bleu cheese and pinch to seal the edges together.
6. Carefully put burgers on grill and cook for 5 to 6 minutes, flip and cook another 5 to 6 minutes. You want to grill them long enough to cook the inside and melt the cheese. Makes 2 big burgers as made here.

This is a very satisfying burger and makes two big (1/2 pounders) as the directions indicate. However, you can divide the beef into six segments to make three smaller burgers. Or, you can make 'sliders' by dividing the beef into eight segments to make four 'sliders.'
You can also choose a variety of different cheeses to change this burger up a bit. If you prefer Cheddar, give it a try. You can't really go wrong with these simple burgers.
