Brandied Sweet Potatoes |
Ingredients

* 1/2 cup raisins
* 1/4 cup brandy
* 4 medium sweet potatoes, boiled until barely tender and sliced into 1/4" slices
* 2/3 cup brown sugar, packed
* 1/4 cup butter
* 2 tablespoons water
* 1/4 teaspoon ground cinnamon

Directions

1. Preheat oven to 350.
2. Combine raisins with brandy in a bowl. Marinate 20-30 minutes then drain. Put sweet potatoes in a baking pan and top with raisins.
3. Combine brown sugar, butter, water and cinnamon in a saucepan. Bring to a boil then pour into baking dish over potatoes.
4. Bake for 40-45 minutes, spoon sauce over potatoes a few times while baking.
