Bread Soup |
Ingredients
|
* 4 onions, sliced
* 4 tomatoes, skinned and sliced
* 1/4 C grated cheddar cheese
* 1/4 loaf of stale wheat bread, broken into cube size pieces
* 4 C water
* 1 TBSP butter
* Salt and pepper to taste

Directions

1. Place the butter in a large soup pan over medium heat.
2. When the butter has completely melted add the onions.
3. Cook onions until just starting to brown about 5 minutes.
4. Add the tomatoes.
5. Pour in the water.
6. Stir in the salt and pepper.
7. Reduce heat to low and boil for 1 hour.
8. Place the bread into a large mixing bowl.
9. Pour the soup over the bread.
10. Cover the bowl and allow the soup to stand 15 minutes.
11. All of the bread should be soaked through with the soup.
12. Top with the cheese just before serving.

This soup has a very old-fashioned look and taste to it. It's a fun meal to make for your family when your children have been studying about the Dust Bowl Days or The Great Depression. It's even a nice way to bring up how your grandparents or parents kept their heads during hard times back in the old days.
On the other hand, we can stand to pinch a few pennies ourselves nowadays, so this inexpensive yet filling pot of soup may be just the perfect meal to start serving more often in our own house!
