Breakfast Tofu Made Mexican Style

Ingredients

* 3 TBSP soy sauce
* 1/4 tsp ground black pepper
* 1/2 C diced onions
* 2 TBSP chopped roasted green chili
* 6 TBSP chopped fresh chives
* 1/2 lb soft tofu
* 1 tsp turmeric
* 1 fresh tomato, peeled, seeded and diced
* 2 garlic cloves, minced
* 1/8 tsp ground cumin
* 3 C egg white

Directions

1. Beat egg whites until broken up and they start to foam.
2. Add finely crumbled tofu to egg whites and mix.
3. Add the soy sauce, pepper and turmeric and set aside.
4. Combine and cook tomato, onion, cumin, garlic, and green chili in a large frying pan.
5. Cook over medium heat until onions are see-through and all liquid has evaporated.
6. Add tofu mixture to the skillet and stir well.
7. Scramble complete mixture until egg whites have been cooked completely.
8. Sprinkle with chives and serve.

Tofu is a great, fun breakfast food because it just absorbs whatever flavor you have cooking with it. So, when you make a breakfast dish that has garlic, cumin, and green chilies in it, the tofu just joins in the celebration! Enjoy1
