Broiled Black Bean & Cheese Quesadillas


*1 tbsp olive oil
*2 tsp bottled minced garlic, divided
*2 C plum tomatoes, chopped
*1 C fresh cilantro, chopped and divided
*1 (15 oz.) can black beans, rinsed and drained
*4 (8 in.) flour tortillas
*3/4 C of Mexican cheese blend, shredded


1. Preheat the broiler.
2. Place the oil and 1 1/2 tsp garlic into a skillet and cook for 30 seconds.
3. Stir in the tomatoes, 1/2 C cilantro and the beans and cook for 5 minutes.
4. Spread the mixture evenly over the tortillas then sprinkle with cheese and fold over.
5. Spray the quesadillas with cooking spray then broil for 3 minutes or until browned.


There are a lot of ways to make quesadillas, but this way is so simple. Once you get the filling together in the skillet, it's easy to throw them together and stick them under the broiler. You can actually get the filling together ahead of time and assemble them as needed. Enjoy!
