*2 tsp bottled minced garlic, divided
*2 C plum tomatoes, chopped
*1 C fresh cilantro, chopped and divided
*1 (15 oz.) can black beans, rinsed and drained
*4 (8 in.) flour tortillas
*3/4 C of Mexican cheese blend, shredded

There are a lot of ways to make quesadillas, but this way is so simple. Once you get the filling together in the skillet, it's easy to throw them together and stick them under the broiler. You can actually get the filling together ahead of time and assemble them as needed. Enjoy!
