Buttered Red Potatoes with Parsley
Ingredients
* 6 medium red potatoes, cubed
* 1/4 cup butter, softened
* 2 Tablespoons minced fresh parsley
* salt & pepper to taste
Directions
1. Bring potatoes to boil in large saucepan.
2. Reduce heat to simmer and cover.
3. Simmer for 20 minutes or until potatoes are easily pierced with fork.
4. Drain well.
5. Place potatoes in serving bowl and mix with remaining ingredients.
