Buttered Red Potatoes with Parsley


* 6 medium red potatoes, cubed
* 1/4 cup butter, softened
* 2 Tablespoons minced fresh parsley
* salt & pepper to taste


1. Bring potatoes to boil in large saucepan.
2. Reduce heat to simmer and cover.
3. Simmer for 20 minutes or until potatoes are easily pierced with fork.
4. Drain well.
5. Return to saucepan and add other ingredients, stirring until combined well and butter is all melted.
6. Serve immediately.


A big bowl of new red potatoes covered in butter and pretty fresh parsley always looks so pretty on the table. This potato dish is the perfect compliment to a nice roast pork meal. Choose a bright green vegetable, like broccoli, to serve along to brighten up your dinner plate.
