* 3 slices bacon, chopped
* 1/2 cup chopped green bell pepper
* 1/4 cup chopped onion
* 1/4 cup chopped celery
* 8 boneless, skinless chicken thighs
* 2 teaspoons Cajun seasoning
* 1 can (14 1/2 oz) diced tomatoes, undrained
* hot cooked long grain rice

1. Brown bacon in skillet over medium heat.
2. Add bell pepper, onion and celery. Cook 3-4 minutes, stirring often.
3. Place bacon and veggies in crock pot. Leave bacon fat in skillet.
4. Sprinkle 1 teaspoon Cajun seasoning onto chicken.
5. Put chicken in same skillet used for bacon.
6. Brown chicken over medium high heat.
7. Place chicken on veggies in crock pot.
8. Pour tomatoes on chicken.
9. Sprinkle 1 teaspoon Cajun seasoning on top.
10. Cover and cook on low 8-9 hours.
11. Serve over hot rice.
