If you have a refrigerator or freezer full of leftover turkey after the holidays like I do, you need lots of recipes to use it up! This is a nice old fashioned and homey way to make a pot pie using your cast iron skillet in the oven.
The video starts out with a homemade pie crust, but don't worry about making your own crust... they even mention in the video that it's just fine to purchase a ready made crust if you don't have time to make your own.
Most cooks consider real pot pie to have only a top crust, so this qualifies as truly authentic. The recipe is pretty basic and you can tweak it to use up whatever vegetables you have, actually.
The neat thing about the video is it actually shows you how to make the roux and white sauce for the "gravy" in the pot pie. Making a roux, or thickener, stumps some people, but this is really a simple task that once you see it done, you'll be able to copy the method for any recipe that needs a thickened sauce. Enjoy!
