Cauliflower & Bacon Crumble Salad |
Ingredients

* 1 lb bacon, cooked and crumbled
* 1 head cauliflower, broken into florets *see note
* 1 head lettuce, shredded
* 1 small onion, diced
* 2 cups mayonnaise or Miracle Whip
* 1/4 cup sugar (more or less to taste)
* 1/2 cup shredded sharp cheddar cheese

Directions

1. Combine crumbled bacon, cauliflower, lettuce, and onion in a large bowl.
2. In a separate bowl, mix mayonnaise, sugar, and shredded cheese until well blended.
3. Add this mixture to the cauliflower mixture and toss to coat.

Bacon, lettuce, and cauliflower just naturally all go together for some strange reason. Whatever that reason is, this is one salad that is very pleasing to both the veggie lovers and bacon lovers!
*Note: I do quickly blanch the cauliflower in boiling water just to bring out the flavor a bit more.
Totally raw cauliflower, just like totally raw broccoli, doesn't appeal to me as much as when these veggies are blanched quickly in boiling water or microwaved just for about 30 seconds or so. You don't want to cook them either way; you just want to cook them long enough for a little boost of flavor.
